Since the dirt that is found in and around kitchens and restaurants is nearly always organic in nature a bleach type of chemical is not necessary. In fact, enzyme based cleaning products have been found to work BETTER than the traditional cleaning products.
Enzymes are naturally occurring molecules that work as catalysts to break down organic material. There are many different types of enzymes that exist in nature, but the primary enzymes leveraged are protease, amylase, and lipase.
